What does EPSG stand for?

EPSG originally stood for the European Petroleum Survey Group. The registry is now maintained by the International Association of Oil & Gas Producers (IOGP) Geomatics Committee.

Why does EPSG 3857 look distorted at the poles?

EPSG:3857 is Web Mercator, designed for web mapping visually, not for accurate measurement. It dramatically inflates the size of objects far from the equator, making Greenland appear as large as Africa.
